Le foreste tropicali sono gli ecosistemi più ricchi di biodiversità del pianeta e una delle sue più grandi riserve di carbonio. Quando vengono abbattute, quel carbonio torna in atmosfera e habitat formatisi in migliaia di anni spariscono in poche settimane. È una perdita che nessuna ricetta può compensare a posteriori.
Lavorare senza olio di palma costa di più e richiede più ricerca. Accettiamo quel costo perché è l'unico modo per tenere corta la lista degli ingredienti, alta la percentuale di frutta secca e trasparente una filiera che vogliamo poter raccontare.
L'olio di palma serve spesso ad abbassare i costi e a stabilizzare la texture. Toglierlo significa che la cremosità deve arrivare dalla materia prima: più frutta secca, di qualità migliore, e una formulazione costruita attorno a essa.
Valutiamo i fornitori su da dove arriva una materia prima e su come viene coltivata, non solo su prezzo e resa tecnica. Una filiera corta e documentata è ciò che rende verificabile una promessa come questa.
Sostituire un olio con un altro non è automaticamente meglio: le alternative rendono meno per ettaro e possono semplicemente spostare il problema. Per questo lavoriamo sulla riduzione dei grassi aggiunti, non sul cambio di etichetta.
