Salted caramel

What is salted caramel?

Salted caramel is caramel balanced with a pinch of salt: the salt softens the bitterness of the cooked sugar and makes the sweetness rounder, so you keep going back for another spoonful. Born in Brittany, it is now a classic on gelato, pancakes, cheesecake and coffee.

Our salted caramel topping has 0.8% salt and a caramel flavour on a milky base made with sunflower oil, never palm oil: it pours at room temperature, no heating needed. It also comes in the super creamy Spoom version, and for those who train there is the Protein Salty Caramel Cream, with 21 g of protein and no added sugar. Everything is made in our facilities in Ribera, in Sicily. See also our guides to topping sauces and no added sugar spreads.

Caramel

Five things to know about salted caramel

A tax that never arrived, a confectioner from Brittany and a pinch of salt that changes everything.

Amber caramel cooking in a copper pan with a dish of sea salt
  1. 1

    Caramel is cooked sugar

When sugar is heated above about 160 °C it melts and turns amber: it is caramelisation, a chain of reactions that creates hundreds of new aromatic molecules, from buttery to toasty notes. The darker the caramel, the less sweet and the more bitter it becomes.

  2. 2

    Why salt works

A pinch of salt does not make caramel "salty": it reduces the perception of bitterness and makes the sweetness rounder and longer. It is the same reason why a pinch of salt goes into almost every dessert.

  3. 3

    Born in Brittany

Brittany was historically exempt from the French salt tax, so salted butter was everywhere in its kitchens. In 1977 a confectioner from Quiberon, Henri Le Roux, created the salted butter caramel that made the region famous and started a worldwide trend.

  4. 4

    Caramel, toffee, dulce de leche

Caramel is sugar cooked until amber, often with cream or butter; toffee is cooked longer, until it becomes hard; dulce de leche is milk and sugar cooked slowly for hours, until the milk itself turns brown. Three different paths to similar flavours.

  5. 5

    Why athletes love it

The sweet-and-salty taste is a favourite after training, and our Protein Salty Caramel Cream makes it fit a sports diet: 21 g of protein per 100 g, no added sugar (9.5 g of sugars, sweetened with maltitol) and no palm oil. It is part of the Performance Collection.

Scyavuru quality

Pistachio and almond trees in Sicily

The right balance between sweet and salty.

Since 1950 we have been working nuts and creams in Ribera, in the agricultural heart of Sicily. Our toppings are made in our own facilities, homogeneous and pourable at room temperature, with a measured 0.8% salt for the right balance.

In the bottles and jars the fats are sunflower oil and cocoa butter, never palm oil. Every batch is checked before filling, in facilities certified BRCGS Food Safety and IFS Food.

Sweet first. Salty after.

FAQ

Everything about salted caramel

Ingredients, uses, protein, palm oil and storage: answers to the most frequent questions.

What is your salted caramel topping made of?

Sugar, sunflower oil, skimmed milk powder and whey, 0.8% salt, low-fat cocoa powder, sunflower lecithin and caramel flavouring. The full list is on the product page.

How do I use it?

It pours at room temperature, no heating needed: on gelato, pancakes, waffles, cheesecake, panna cotta and crêpes, or in coffee drinks such as a caramel latte. Shake the bottle before use.

What's the difference between the topping and the Spoom?

The taste is the same salted caramel; the Spoom has a super creamy texture and a squeeze bottle, the Gourmet topping is a little more fluid, ideal for drizzling.

Is there a salted caramel spread with no added sugar?

Yes: the Protein Salty Caramel Cream, with 21 g of protein and 9.5 g of sugars per 100 g, sweetened with maltitol. As with all products containing polyols, excessive consumption may have a laxative effect.

Does it contain palm oil?

No: the toppings are made with sunflower oil, the protein cream with sunflower oil and cocoa butter. Read why we chose not to use palm oil.

Does it contain butter?

No: the toppings get their creaminess from milk powder and sunflower oil, and their taste from caramel flavouring and salt. The full ingredients are on each product page.

Is it vegan?

No: all our salted caramel products contain milk.

Does it contain allergens?

All contain milk; the protein cream also lists tree nuts among its allergens. They may contain traces of gluten, peanuts, soy and tree nuts: full information is on the label and on each product page.

How should I store it?

In a cool, dry place with the cap closed, away from heat. No need for the fridge, which would make it thicker. It keeps for 18 months from production.

Do you have professional formats?

Yes: the salted caramel topping in an 800 g bottle, in the Professional Collection; for larger volumes see our B2B Services.

How much is shipping?

Shipping is free for orders from €69 in Italy and from €99 in the rest of the European Union. All products are in the shop.
