Artisan panettone

What is an artisan panettone?

The panettone is the tall, domed sweet bread of the Italian Christmas, born in Milan. Its dough of flour, butter, egg yolk, sugar and natural yeast rises slowly until it becomes soft and airy; artisan panettoni are made in small batches, with more attention to the ingredients and the leavening than industrial ones.

Ours are artisan and 100% made in Sicily. The classic dough is made with butter, egg yolk, honey and natural yeast, and has no raisins and no candied peel; each flavour has its own glaze and, in the gift box, a 200 g jar of our cream: pistachio with the 25% pistachio cream, chocolate with the hazelnut and cocoa cream, orange with the orange cream, berries with the berries cream. The creams are made in our facilities in Ribera and you can also find them in our guides to pistachio cream and hazelnut spread.

Five things to know about panettone

A Milanese legend, a very slow dough and a habit of hanging upside down: meet the king of the Italian Christmas.

Freshly baked panettoni hanging upside down to cool in a bakery
  1. 1

    A legend from Milan

Panettone was born in Milan, and its origin is wrapped in legend. The most famous tells of a Christmas banquet at the court of Ludovico il Moro in the 15th century: the dessert burned, and a kitchen boy called Toni saved the evening with a sweet bread of his own. From "pan de Toni", the story goes, came the name.

  2. 2

A dough that takes its time

Traditional panettone is a leavened dessert: the dough is kneaded in several stages and left to rise for many hours before baking. The slow fermentation develops the aroma and gives the crumb its typical long, soft strands, the ones that tear apart like cotton.

  3. 3

    Cooled upside down

As soon as they come out of the oven, panettoni are pierced at the base with long skewers and hung upside down for several hours. A crumb so light and rich in butter would otherwise collapse under its own weight: cooling upside down keeps the dome high and the inside airy.

  4. 4

Better at room temperature, or warm

Panettone gives its best at room temperature: if your house is cold, leave it near a source of warmth for a little while before serving. Slightly warmed, a slice releases the aroma of butter and becomes even softer. Cut it into wedges, from the dome down, with a serrated knife.

  5. 5

Filled panettone: how to do it at home

The filled panettone is a modern way to enjoy the classic. With our box you can make it at home: cut the panettone horizontally into three or four discs, spread each one with the cream from the jar and put them back together; or serve it in slices with the cream on the side. Pistachio, hazelnut and cocoa, orange or berries: every panettone has its matching cream.

FAQ

Everything about our panettoni

Flavours, ingredients, storage, filled panettone and corporate gifts: answers to the most frequent questions.

What makes your panettone artisan?

Our panettoni are artisan and 100% made in Sicily: a classic dough with butter, egg yolk, honey and natural yeast, made in small batches in a facility certified BRCGS and IFS, and finished with a different glaze and decoration for each flavour.

Which flavours are available?

Four: pistachio (pistachio glaze and chopped pistachios), chocolate (cocoa glaze and milk chocolate curls), orange (orange glaze and orange-flavoured curls) and berries (berry glaze, red berry crumble and strawberry curls).

What's in the box?

An 850 g panettone and a 200 g jar of cream matching its flavour, 1,050 g in total, in a hand-illustrated Sicilian gift box with a rope handle, measuring 23 × 29 × 16 cm.

Do they contain raisins or candied peel?

No. None of our panettoni contain raisins or candied peel: the dough is soft and buttery, and the flavour comes from the glaze, the decoration and the cream in the box.

How do I make a filled panettone?

Cut the panettone horizontally into three or four discs with a serrated knife, spread each disc with the cream from the jar and put them back together, then leave it to rest for a few minutes before slicing. If the cream is too firm, keep it at room temperature for a while first.

How long do they keep?

The panettone keeps for 110 days from the production date and the cream for 18 months. Store them in a cool, dry place, away from light, humidity and heat; the best-before date is on the pack. Once opened, close the panettone well in its bag and enjoy it within a few days.

How should I serve it?

At room temperature, or slightly warmed, which brings out the aroma of butter. Cut it into wedges from the dome down with a serrated knife and serve it with the cream on the side, with coffee, hot chocolate or a glass of sweet wine.

Do they contain allergens?

All contain gluten (wheat), eggs, milk and soy; the pistachio panettone also contains pistachios and the chocolate one hazelnuts. They may contain traces of peanuts, tree nuts and sesame: full information is on the label and on each product page.

Do they contain palm oil?

The creams in the jars do not: they are made with sunflower oil, cocoa butter and extra virgin olive oil. The glaze of the panettoni contains palm fats (palm kernel in the berries panettone): the full list of ingredients is on each product page.

Can I order them as corporate gifts?

Yes: they are a gift for clients and teams. The panettoni are packed six boxes per carton; for quantities, see our B2B Services or write to us.

When are they available?

They are a seasonal Christmas product, available while stocks last: order early if you want to be sure of your favourite flavour.

How much is shipping?

Shipping is free for orders from €69 in Italy and from €99 in the rest of the European Union. All products are in the shop.
