Berry sauce

What is a berry topping?

A berry topping (or berry sauce) is a sweet, pourable sauce with the taste of red fruits, ready to drizzle over cheesecake, gelato, panna cotta, yogurt and pancakes. Unlike a homemade coulis, made with fresh fruit and kept in the fridge for a few days, it is ready to use and keeps in the cupboard.

Our berry topping gets its flavour from blueberries and raspberries, freeze-dried and ground, on a creamy milky base made with sunflower oil, never palm oil: it pours at room temperature, no heating needed. It also comes in the super creamy Spoom version, and at Christmas there is the berries panettone with a jar of berries cream in the box. Everything is made in our facilities in Ribera, in Sicily. See also our guides to topping sauces and artisan panettone.

How to use it

Three ideas with the berry topping

A squeeze is all it takes. Here is where it gives its best.

1

On cheesecake

The classic: a New York cheesecake or a no-bake cheesecake, with a ribbon of berry topping on top and a few fresh berries.

2

On gelato and panna cotta

On fior di latte, vanilla or yogurt gelato, on panna cotta and semifreddo: the slight acidity of the berries balances the creaminess.

3

In the breakfast bowl

With Greek yogurt, granola and fresh fruit, or on pancakes and waffles: the Spoom bottle is made to be squeezed.

Berries

Five things to know about berries

Blueberries are berries, raspberries are not, and the colour is a natural pigment: the surprising world of red fruits.

Ripe raspberries and blueberries growing on bushes in a forest clearing
  1. 1

    Not all "berries" are berries

For botanists the blueberry is a true berry, while the raspberry is an aggregate fruit made of dozens of tiny drupes, each with its own seed. The strawberry is not a berry at all: its "seeds" are the real fruits.

  2. 2

    The colour of anthocyanins

The blue of blueberries and the red of raspberries come from anthocyanins, natural pigments that change shade with acidity: more red in acidic environments, more blue-violet in neutral ones.

  3. 3

    Wild and cultivated

The wild blueberry of European woods is small, with violet flesh; the cultivated highbush blueberry, of North American origin, is bigger, with pale flesh. Raspberries grow wild in the undergrowth and on the edges of mountain woods.

  4. 4

    Freeze-drying keeps the aroma

In freeze-drying the fruit is frozen and the water removed under vacuum, without cooking it: aroma and colour are preserved much better than with heat. Our berry topping is made with freeze-dried, ground blueberries and raspberries.

  5. 5

    Why athletes love it

Fresh berries are rich in fibre (raspberries about 6.5 g per 100 g), vitamin C and polyphenols, with few calories: they are a classic in breakfast bowls after training. Add a drizzle of topping to Greek yogurt and fresh fruit, and for protein look at the Performance Collection.

FAQ

Everything about our berry topping

Ingredients, uses, colouring, palm oil and storage: answers to the most frequent questions.

What is your berry topping made of?

Sugar, sunflower oil, skimmed milk powder and whey, blueberry and raspberry powder (1%), flavouring, sunflower lecithin, carmine (E120) for the colour and malic acid. The full list is on the product page.

Is it the same as a berry coulis?

No. A coulis is made at home with fresh or frozen fruit and sugar, and keeps in the fridge for a few days. Our topping is ready to use, pours at room temperature and keeps in the cupboard until the best-before date.

How do I use it?

On cheesecake, gelato, panna cotta, semifreddo, yogurt, pancakes and waffles. It pours at room temperature: shake the bottle and squeeze.

What's the difference between the topping and the Spoom?

The berries are the same; the Spoom has a super creamy texture and a squeeze bottle, the Gourmet topping is a little more fluid, ideal for drizzling.

Is it suitable for vegetarians or vegans?

No: it contains milk and is coloured with carmine (E120), a colouring of animal origin obtained from cochineal.

Does it contain palm oil?

The bottles do not: they are made with sunflower oil. The professional 3 kg berries cream contains palm oil, as stated on its page. Read why we chose not to use palm oil.

How sweet is it?

It is a sweet topping, with 53 g of sugars per 100 g: a drizzle is enough. The malic acid and the berries give it a light, fresh acidity.

Does it contain allergens?

It contains milk. It may contain traces of gluten, peanuts, soy and tree nuts: full information is on the label and on each product page.

How should I store it?

In a cool, dry place with the cap closed, away from heat. No need for the fridge, which would make it thicker. It keeps for 18 months from production.

Do you have professional formats?

Yes: the berry topping in an 800 g bottle and the berries cream in a 3 kg bucket, in the Professional Collection; for larger volumes see our B2B Services.

How much is shipping?

Shipping is free for orders from €69 in Italy and from €99 in the rest of the European Union. All products are in the shop.
