Topping sauces

What is a topping sauce?

A topping sauce is a sweet, pourable sauce to drizzle over gelato, pancakes, waffles, yogurt and desserts. Unlike a spreadable cream it stays fluid at room temperature, so there is no need to heat it: just squeeze the bottle. Ours are made with sunflower oil and milk in twelve flavours: from pistachio (20% pistachios) and hazelnut (20%) to peanut with 60% peanuts, plus chocolate, salted caramel, tiramisù, mokaccino and four fruit flavours.

Every bottle is made in our facilities in Ribera, Sicily, certified BRCGS and IFS, and is palm oil free. You will find them in 250 g bottles in the Gourmet Collection, in the colourful squeeze bottles of the Spoom line and in 800 g formats for bars and gelaterie in the Professional Collection. How to choose

20%, 50% or 60% nuts: what changes

In the nut toppings the percentage tells you how much fruit is in the bottle. More nuts means more taste, more protein and less sugar.

20%

Pistachio and hazelnut

The pistachio and hazelnut toppings contain 20% nuts: the gelateria sauce, sweet and glossy, with about 48 g of sugars and 5.5–5.9 g of protein per 100 g.

50%

Pistachio and peanut

The pistachio and peanut topping reaches 50% nuts (45% peanuts, 5% pistachios): sugars drop to 29 g and protein rises to 16 g per 100 g.

60%

Peanut

The peanut topping, also in the Spoom bottle, is 60% roasted peanuts: only 24 g of sugars and 18 g of protein per 100 g. The sportiest topping in the range.

Five things to know about toppings

Why they pour, where the sundae was born and how to pick the right one: a few facts to top it all off.

Pancakes drizzled with peanut and berry topping
  1. 1

Why they pour and creams don't

It is all in the fat. Our toppings are made with sunflower oil, which is liquid at room temperature, so the sauce flows straight from the bottle. Our creams also use cocoa butter, which stays solid at room temperature: that is what makes them thick and spreadable.

  2. 2

The sundae was born in America

The ice cream sundae, a scoop of ice cream with a sauce poured over it, appeared in the United States at the end of the 19th century: Ithaca (New York) and Two Rivers (Wisconsin) still argue over who invented it. A popular story says the name comes from Sunday, the day it was served.

  3. 3

    Salt makes caramel taste sweeter

A pinch of salt softens bitterness and makes sweetness and aroma stand out: that is why salted caramel tastes rounder than plain caramel. In our salted caramel topping the salt is 0.8%, just enough to be felt.

  4. 4

    Tiramisù with real mascarpone

Our tiramisù topping is made with real mascarpone, the soft fresh cheese obtained by heating cream and thickening it with an acid, plus coffee and cocoa. Pour it over ladyfingers or fior di latte and you have a tiramisù in a minute.

  5. 5

Why athletes choose the nut toppings

Not all toppings are the same. The fruit and caramel flavours are a treat (about 50 g of sugars per 100 g), while the nut ones are closer to a food: the peanut topping has 60% peanuts, 18 g of protein and 24 g of sugars per 100 g, the pistachio and peanut 16 g of protein. A tablespoon on Greek yogurt or oat porridge after training adds taste, protein and energy. For even more protein, see our peanut creams.

Scyavuru quality

Pistachio and almond trees in Sicily

A good topping starts with real ingredients.

Since 1950 we have been working nuts and fruit in Ribera, in the agricultural heart of Sicily. Our toppings start from real ingredients: roasted nuts, cocoa, Arabica coffee, mascarpone, orange essential oil, mango and berries.

The base is sunflower oil and milk, never palm oil, for a sauce that stays fluid without heating. Every batch is checked before bottling, in facilities certified BRCGS Food Safety and IFS Food.

Real ingredients. No shortcuts.

FAQ

Everything about topping sauces

Ingredients, palm oil, storage, how to use them and which one to choose: answers to the most frequent questions.

What is a topping sauce?

A sweet, pourable sauce to drizzle over gelato, pancakes, waffles, yogurt and desserts. It stays fluid at room temperature, so there is no need to heat it. Ours come in twelve flavours, made in Ribera, Sicily.

What is the difference between a topping and a spreadable cream?

A cream (jar) is thick, made to spread and fill; a topping (bottle) is fluid, made to pour. Our toppings use sunflower oil only, the creams also cocoa butter. If you prefer a jar, see our pistachio cream or hazelnut spread.

Do your toppings contain palm oil?

No: all our toppings, 250 g, Spoom and 800 g, are made with sunflower oil. Read why we chose not to use palm oil.

Do I need to heat or refrigerate them?

No. They are pourable at room temperature. Store them in a cool, dry place with the cap closed; if it is very cold the sauce thickens slightly: leave it at room temperature for a few minutes or warm the bottle in your hands.

Which topping should I choose for gelato?

For fior di latte or vanilla the pistachio, hazelnut or chocolate; for coffee gelato or affogato the mokaccino; for a tropical sundae coconut or mango. The quiz on this page suggests the three best for you.

Which ones are best for pancakes and breakfast?

The nut toppings: the peanut (60% peanuts) and the pistachio and peanut are rich in protein; salted caramel and berries for a sweeter breakfast. The Spoom squeeze bottles are designed for it.

How many nuts are in the toppings?

20% in the pistachio and hazelnut toppings, 50% in the pistachio and peanut (45% + 5%) and 60% in the peanut topping. The chocolate has 10% cocoa and a touch of hazelnut, the coconut 10% coconut.

What are the Spoom toppings?

The Everyday Collection line: chocolate, pistachio, peanut, salted caramel and berries in a 250 g squeeze bottle, with the same recipes as our 250 g toppings and a more playful look.

Do they contain allergens?

All contain milk; the nut toppings contain tree nuts or peanuts (the chocolate topping also contains hazelnuts). Full allergen information, including possible traces, is on the label and on each product page.

Are they gluten free?

None of our toppings contains gluten ingredients, but they are made in a facility that also handles wheat: they may contain traces and are not certified gluten free.

How long do they keep?

The best before date is on the bottle. Once opened, keep the cap clean and closed and store the bottle away from heat.

Do you have professional formats?

Yes: all twelve flavours in 800 g bottles in the Professional Collection, for gelaterie, bars and pastry shops; for larger volumes and private label see our B2B Services.

How much is shipping?

Shipping is free for orders from €69 in Italy and from €99 in the rest of the European Union. All products are in the shop.
