Almond spread

What is almond spread?

An almond spread is a sweet cream made from ground almonds, sugar, milk and vegetable oils, smooth enough to spread on bread. It is not marzipan (almond paste with a lot of sugar, to be shaped) and not a 100% almond paste, which contains only almonds and is used as a base in pastry and gelato.

Ours, the Almond Cream, contains 22% almonds and is made with sunflower oil, cocoa butter and extra virgin olive oil, never palm oil: delicate and ivory-coloured, with a gentle note that recalls Sicilian almond pastries. It also comes in the Spoom 300 g jar, and for professionals there is the 100% Pure Almond Paste in a 3 kg bucket. Everything is made in our facilities in Ribera, in Sicily. How to choose

22% or 100%: what changes

The almond percentage must appear on the label (EU Regulation 1169/2011). Here is what it means in our three almond products, per 100 g.

22%

Almond cream

The Almond Cream has 22% almonds in a sweet, milky base with extra virgin olive oil: silky and delicate, with 6.9 g of protein per 100 g. To spread, from breakfast to snack time.

300 g

Spoom

The same recipe in the Spoom jar: 22% almonds, no palm oil, a bigger format for those who finish a jar in a few days.

100%

Pure almond paste

The 100% Pure Almond Paste contains only European almonds: no sugar, oil or additives, 15 g of protein and 8.5 g of fibre per 100 g. A 3 kg bucket for gelato, pastry and almond drinks.

The almond

Five things to know about almonds

A cousin of the peach that flowers in the middle of winter and lies at the heart of Sicilian pastry: meet the almond.

Almond orchard in bloom in the Sicilian countryside
  1. 1

    A cousin of the peach

The almond tree (Prunus dulcis) belongs to the same genus as the peach, the apricot and the cherry. Its fruit is a drupe with a thin, leathery husk: what we eat is not the fruit but the seed inside the stone.

  2. 2

It blooms in the middle of winter

The almond is one of the first trees to flower, between January and March, when the countryside is still bare. In Sicily the blossoming is a celebration: every year in Agrigento, in the same province as Ribera, the Almond Blossom Festival has been held since the 1930s.

  3. 3

    Sweet and bitter almonds

The almonds we eat are sweet almonds. Bitter almonds contain amygdalin, which gives them their intense aroma but makes them unsuitable to eat raw: in pastry they are used in tiny amounts, to flavour amaretti and some almond sweets.

  4. 4

    The heart of Sicilian pastry

Sicilian pastry is built on almonds: pasta reale and frutta martorana, the almond biscuits, almond milk and almond granita, the toasted almonds of nougat. Our Almond Cream, with its gentle marzipan note, comes from the same tradition.

  5. 5

    Why athletes love it

Almonds are among the richest nuts in vitamin E (about 25 mg per 100 g, more than the daily reference intake), with about 21 g of protein, 12 g of fibre and magnesium, and fats that are mostly monounsaturated. For those who train, the purest choice is the 100% Pure Almond Paste, with 15 g of protein and 8.5 g of fibre per 100 g; the 22% cream is a sweet treat for breakfast.

Scyavuru quality

Pistachio and almond trees in Sicily

A great almond cream starts with the almonds.

Since 1950 we have been working nuts in Ribera, in the agricultural heart of Sicily. We select almonds from approved suppliers and refine them slowly in our own facilities until the cream is perfectly smooth.

In the jars the fats are sunflower oil, cocoa butter and extra virgin olive oil, never palm oil, and the 100% paste contains only almonds. Every batch is checked before jarring, in facilities certified BRCGS Food Safety and IFS Food.

Delicate by nature. Sicilian by tradition.

FAQ

Everything about almond spread

Ingredients, almonds, palm oil, allergens and storage: answers to the most frequent questions.

What is the difference between almond spread, marzipan and almond paste?

The almond spread is a sweet cream to spread on bread: ours has 22% almonds, milk and vegetable oils. Marzipan is a firm almond and sugar paste, to be shaped. A 100% almond paste, like our Pure Almond Paste, contains only ground almonds and is a base ingredient for pastry and gelato.

How many almonds does your almond cream contain?

22%, as stated on the label of the Almond Cream and the Spoom. The professional paste is 100% almonds.

Does it contain palm oil?

No: the Almond Cream and the Spoom are made with sunflower oil, cocoa butter and extra virgin olive oil. Read why we chose not to use palm oil.

Where do the almonds come from?

In the 22% creams the almonds are of EU and non-EU origin; in the 100% Pure Almond Paste they are European, as stated on each label.

What does it taste like?

Delicate and sweet, with a light milky note and a gentle hint of marzipan that recalls Sicilian almond pastries. The texture is smooth and silky, ivory-coloured.

How can I use it?

On toast, rusks and croissants; in yogurt and porridge; to fill crêpes, biscuits and tarts; with fresh fruit such as strawberries and pears. With coffee, it recalls the Sicilian almond breakfast.

Is it vegan?

No: the almond cream contains milk. The 100% Pure Almond Paste contains only almonds.

Does it contain allergens?

It contains tree nuts (almonds) and milk. It may contain traces of gluten, peanuts and soy: full information is on the label and on each product page.

How should I store it?

In a cool, dry place with the lid closed, away from heat. No need for the fridge, which would make it hard to spread. It keeps for 18 months from production (24 months for the 100% paste). A little natural oil on the surface is normal: just stir.

Do you have professional formats?

Yes: the 100% Pure Almond Paste in a 3 kg bucket, in the Professional Collection; for larger volumes see our B2B Services.

How much is shipping?

Shipping is free for orders from €69 in Italy and from €99 in the rest of the European Union. All products are in the shop.
