DiscoverHome›Shop›How to fill a panettone
A filled panettone takes 10 minutes at home, no oven needed: all you need is a serrated knife and a good cream. Here is how to cut it, how much cream to use and which one to choose for each flavour.
Choose your creamA filled panettone is a classic panettone layered with a cream: you slice it horizontally into three or four layers, spread the cream on each one and put it back together. It is the easiest way to make the Christmas panettone special, and it takes about ten minutes at home, with no oven.
That is exactly why our artisan panettoni arrive unfilled: you choose the cream. For the pistachio panettone we recommend the 25% pistachio cream, for the chocolate one the hazelnut and cocoa cream, for the orange one the orange cream and for the berries one the 22% almond cream. All are made in our plants in Ribera, Sicily, and free from palm oil.
Each panettone has its cream, but you can mix and match too: here are ours, flavour by flavour. Or take the quiz.

DiscoverIn layers, with a piping bag or hollowed out: choose based on the time you have and how you will serve it.
The classic method explained above: the panettone sliced horizontally and filled layer by layer. More cream in every slice and a lovely effect when you cut it at the table.
The panettone stays whole. Put the cream in a piping bag with a long plain nozzle and fill it from the bottom in 4 or 5 spots, squeezing until you feel resistance. Quicker, and nobody sees the filling until you cut it.
Cut the top off like a lid, hollow out the panettone leaving a two-finger border and fill it with layers of cream and cubes of the crumb you removed. Close it with the lid: the most spectacular, best made a few hours ahead.
The layer method: the easiest one, and the one that puts the most cream in every slice.
Cold cream spreads badly and tears the crumb. Keep the jar out of the fridge and the panettone in its box for at least an hour: the cream softens and the crumb stays fluffy.
Gently remove the paper from the bottom and leave it on the sides: it holds the panettone together while you cut it and put it back together.
Lay it on its side and slice it horizontally with a long serrated knife, using a sawing motion without pressing. Turn the panettone as you cut for even layers. Keep the glazed top aside: it will be the last layer.
Start from the bottom layer and spread the cream with a spatula or the back of a spoon, leaving a centimetre free at the edge. You need about 50-60 g per layer: one 200 g jar is enough for the whole panettone.
Stack the layers in the order you cut them and finish with the glazed top, pressing lightly. Wrap it in cling film if you want to keep it compact.
Let the filled panettone rest for 30 minutes, then cut it into wedges from the top down. Serve it at room temperature; if the filling contains cream or mascarpone, keep it in the fridge and eat it within a day.

We have been working nuts in Ribera since 1950. The creams to fill the panettone are made in our BRCGS and IFS certified plants, with sunflower oil, cocoa butter or extra virgin olive oil and never palm oil.
They are shelf-stable spreads: they keep at room temperature and stay soft, which is why they spread easily on the crumb without tearing it.
Sicilian, inside and out.
How we make themHow much cream you need, how far ahead to make it and how to store it.
For an 850 g panettone cut into 3 or 4 layers you need about 200 g of cream, one jar: 50-60 g per layer. If you like a generous filling, get two and use the second to serve each slice with an extra spoonful of cream.
A spread that stays soft at room temperature, so it goes on without tearing the crumb. For pistachio we recommend the 25% pistachio cream or, for a bolder taste, the 45% one; for chocolate the hazelnut and cocoa cream; for orange the orange cream.
Yes, with a spread: fill it the evening before, wrap it in cling film and keep it at room temperature, away from heat. With whipped cream or mascarpone it must go in the fridge and be eaten within 24 hours.
Use a long serrated knife and cut with a sawing motion, without pressing, with the panettone at room temperature. Leave the paper on the sides until you have put it back together: it holds the layers in place.
Whip 200 ml of fresh cream with 250 g of mascarpone, then fold in 150 g of pistachio or hazelnut and cocoa cream. Fill the panettone in layers or with a piping bag and keep it in the fridge until half an hour before serving.
Fill a piping bag fitted with a long plain nozzle, push it into the panettone from the bottom in 4 or 5 spots and squeeze until you feel resistance. If the cream is too thick, warm it for a few seconds in a bain-marie and stir.
No: our artisan panettoni arrive unfilled and the cream is not included. Add the jar you like to your order and fill it yourself, as explained in this guide.
With a spread it keeps for 2-3 days at room temperature, well wrapped in cling film or in its box. With fillings based on whipped cream or mascarpone it goes in the fridge and should be eaten within 24 hours.
